Jerk is more than a cooking style. It is a bold, deeply rooted Jamaican tradition shaped by history, survival, and unforgettable flavor.

Its origins trace back to the Maroons, self-liberated Africans who established free communities in Jamaica’s rugged mountain regions. Living off the land, they hunted wild pigs and developed ways to season, preserve, and slow-cook meat so it could last longer and feed their communities.

Using the ingredients around them, they created powerful spice pastes from native herbs, fiery peppers, aromatic leaves, and crushed pimento berries known today as allspice. That pimento, along with smoke, heat, and patience, became the heart of jerk’s signature flavor: earthy, spicy, smoky, and unmistakably Jamaican.
